Yields 10 people

For the Citrus Syrup (yields 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g granulated sugar

To make the Cocktail (produces 850ml, serving 10)

400ml good quality vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine cordial (from the recipe above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish

Method

For the Syrup: Place all the components inside a saucepan, heat until it reaches a gentle boil, mixing so the sugar melts. Next, remove from the stove and leave to cool entirely. Decant to a sterilised bottle, close it and store in the refrigerator, where it will keep for around four weeks.

Preparing the Batch Mix: Mix all the spirits and syrup into one sizeable container, allow it to infuse for one hour, then strain preferably using cheesecloth, making it completely strained.

For serving: Pour 85ml of the batch mix into a cocktail shaker containing ice, gently stirring lightly for about 60 seconds until cold. Strain into a cold coupe glass or a similar vessel, garnish with a few cranberries adding the final touch using a light spray of the essential oil over the drink.
